RECIPES THAT MAKE US HAPPY

We all love to eat, right? Holidays and special events always gets someone in the kitchen. In my house, its usually me!

This is one of my favorite Chinese dishes; so in honor of Chinese New Year we could have a Chinese banquet. This is a lighter version based on a Martha Stewart recipe. Martha is a wuss, culinarily speaking, as General's ckn is supposed to be spicy, so I made it better....


Ingredients

1 1/4 cups long-grain white or brown rice or 4-6 ounces noodles

1/4 cup cornstarch, divided

1 pound snow peas, trimmed and halved crosswise (optional, but good; other crunchy veggies may be substituted if desired...or served along side)
6 garlic cloves, mashed
2 teaspoons fresh ginger, peeled and grated (I store fresh ginger in the freezer to use as needed)
1/4 cup light-brown sugar
6 tablespoons soy sauce
1 teaspoon red-pepper flakes

2 large egg whites
Coarse salt and ground pepper
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
2 tablespoons vegetable oil, such as safflower


Directions

Cook rice or noodles according to package instructions; set aside, keep warm.

In a large bowl, stir together 1 tablespoon cornstarch and 3/4 cup cold water until smooth. Add snow peas, garlic, ginger, sugar, soy sauce, and red-pepper flakes; toss to combine, and set aside.

In another bowl, whisk together egg whites, remaining 3 tablespoons cornstarch, 1/2 teaspoon kosher salt, and 1/2 teaspoon fresh cracked pepper. Add chicken, and toss to coat.

In a large nonstick skillet, heat 1 tablespoon oil over medium-high. Lift half the chicken from egg-white mixture (shaking off excess), and add to skillet. Cook, turning occasionally, until golden, 6 to 8 minutes. Transfer to a plate; repeat with remaining oil and chicken, and set aside (reserve skillet).

Add snow-pea mixture to skillet. Cover; cook until snow peas are tender and sauce has thickened, 3 to 5 minutes. Return chicken to skillet (with any juices); toss to coat.

Serve over rice or noodles.

Thank you so much for starting this thread. And THANK YOU for this recipe. I've been looking for a good General Tso recipe.

Would you happen to have a good Tomato Basil Soup recipe? I made a pot from a shared recipe last week and didn't care too much for it. I LOVE Tomato Basil soup.
